Yakitori - Recipe below...
This recipe serves 2 people.
INGREDIENTS
200g Thin sliced beef
300g Firm tofu
4 Shitake mushrooms
1/2 carrot
1/2 bunch of watercress
250g Chinese cabbage (about 1/4 of a cabbage)
1 shallot (spring onion)
2-4 tablespoons white sugar
8 pieces of devil tongue
80ml (1/3 cup) Mirin (Japanese rice wine)
80ml (1/3 cup) Soy sauce
2 raw eggs
METHOD

Cut the carrot into strips
Cut the cabbage into 5-8 pieces
Chop the shallot into short pieces of 5-10cm (2-4 inches)
Cut the excess fat off the meat but don't discard it
Cut the tofu into cubes and fry it on two sides until it is golden brown
Mix 8ml Mirin and 80ml soy sauce in a pouring contained such as a small jug
Sukiyaki should be cooked in a heavy iron pan - usually at the serving table
The pan should have a loose fitting lid - traditionally made of wood.
Place the pan on a medium-high heat and grease the pan with the excess fat from the meat.
Discard the fat.
Add the solid ingredients (except the eggs) to the pan, keeping each in its own separate section
Put the lid on the pan and simmer for 3-5 minutes.
There is no need to add water as the water which comes out of the ingredients is enough for simmering
The ingredients will shrink as they cook so don't worry if the pan seems too full.
Sprinkle 2 tablespoons of sugar evenly on top.
Replace the lid and simmer for another 2 minutes. This allows the sugar to dissolve.
Pour the mirin/soy sauce mixture evenly over everything.
Simmer for another 1-2 minutes.
Optionally add another slice of meat on top before serving.
SERVING
For each person, serve a bowl of rice and a raw egg in a separate small bowl
Each person should beat their own egg using chopsticks to create a dipping sauce.
The pot is shared at the table while still simmering on a low heat.
Each item should be dipped in the raw egg before eating.
